Some menus list dishes. Then there is Martino Ruggieri's, written in free verse, like a collection of poems.
Beneath the four-hundred-year-old arcades of the Palais Royal, in galerie de Valois, the chef from Puglia opened his new restaurant in late 2025. Italian Bocuse d'Or winner, Yannick Alléno's right-hand man at Pavillon Ledoyen for eight years, and already holder of two stars at his first Maison Ruggieri in the 8th, he has put everything on the line here. A Michelin star arrived in 2026 after barely two months, and his stated ambitions reach higher.
The enigmatic dish names call on Mallarmé as much as instinct. On the plate, daring combinations that are entirely his own: sea urchin and foie gras, pork fat and almond, veal sweetbread and dulse seaweed. Throughout, deep, powerful sauces declare their connection to the great French culinary school.
Dining opposite the gardens of the Palais Royal, a few steps from the Comédie-Française, in surroundings both intimate and majestic: the setting is part of the experience. Lunch menu around 125 euros, full evening tasting menu at 300 euros.
Because a chef at the height of his maturity is taking every risk here, and you can taste it.
