There are meat restaurants that talk about traceability. And then there is La Maison de l'Aubrac, where the beef comes from the family's own farm.
On Rue Marbeuf, a hundred metres from the Champs-Élysées, Élisabeth and Christian Valette combine two rare roles: livestock farmers in Laguiole and restaurateurs in Paris. Their Aubrac cattle, raised without GMOs or preventive antibiotics at the Vialars farm in Aveyron, travel directly from farm to plate.
Exceptionally tender fillet, a sharing côte de bœuf and meat aged on site: here, you taste the best the Aubrac plateau has to offer. And Aveyron's local produce follows through to the end: traditionally stretched aligot, knife-cut sausage, well-aged Laguiole cheese and Roquefort. A cellar rich in Languedoc wines completes the journey.
A feature unique in the neighbourhood: the restaurant serves until 01:00 early in the week, and until 07:00 from Wednesday to Saturday. A côte de bœuf at 03:00: few Paris addresses can match that.
Because direct sourcing has always been a family reality here, rather than a marketing claim.
